Ingredients:
500 gm raw mango, diced small
200 gm Pushp Achar Masala @pushpmasale
1/4 tsp Hing (optional for a strong flavor)
1 cup Mustard Oil
Step 1: Prepare the Mangoes
- Wash the raw mangoes thoroughly
- Dry the mangoes thoroughly
- Chop the mangoes into small pieces (about 500 gm)
Step 2: Mix with Spices and Oil
- In a bowl, add the chopped mango pieces
- Add 200 gm of Pushp Achar Masala to the bowl
- Add 1/4 tspn of Hing (optional, for strong Hing flavor)
- Pour 1 cup of Mustard Oil over the mango and spice mixture
- Mix everything well until the mango pieces are evenly coated with the spice and oil mixture
Step 3: Infuse with Hing Flavor (Optional)
- Heat a piece of coal until it's hot
- Add a small amount of Hing to the hot coal
- Cover the coal with an achaar bottle (a special type of Indian pickle jar)
- Leave it for 2-3 minutes to infuse the Hing flavor into the achaar
Step 4: Fill and Store the Achaar
- Fill the prepared achaar mixture into a clean and dry bottle
- Store the bottle in a cool, dry place
- The achaar will remain fresh for a long time, up to a year or more.
